100 Monkeys

I've been listening to this CD lately by 100 Monkeys (its pretty good, I like it at least, and since I'm the one listening to it, I guess that's all that matters). Anywho, one of the members of the band is in Twilight (that's how I heard of them, but their music is good). Their lead singer Jackson Rathbone, plays Jasper Whitlock Hale (Cullen) in the movie. He has a really cool 'gift'(in the books) I'd like to have around sometimes, he can change the mood of a room, he can make you feel excited or completely relaxed. I think it would be nice to be completely relaxed sometimes :).

Beach & Baby Shower

This past weekend, I went to visit my sister for her second baby shower. She lives in a small beach town, so her friends were throwing it for her. She's getting really excited about having the baby soon. Muchkin man (she's not telling anyone the name) is ready to come early we think, but hopefully he'll stay put for a little longer (he needs to bake some more...hehe). My mom & her boyfriend came down as well to join in the festivities.

Saturday morning I got up early so I could go for a run, it was beautiful out on the beach. I ran from Fort Macon (yes, its really a Fort) to the pier, about 3 miles, and back. And just so ya know, its harder to run in sand than it is to run on a treadmill or even on the crazy hills in my neighborhood, but I did it. I had lots of sand in my shoes when I was done. This was the view on the way back from the pier.

And I wrote Jason a message on my way back (cause I try to be a good wife)...

Then I went to a cute little store with my sis and got me a cute ring (and earrings & a super cute koozy!) I love my ring though, cause my roomies in college used to call me E, so it reminded me of them. (I haven't gotten to try out my koozy yet, but football season's coming!)

Then it was time for the shower. My sister has some great friends in here little town, and I'm happy for her. My nephew has so many little out fits with fishes on them (cause his daddy is a Captain of a Charter Boat). He's gonna look so cute!
His room is uber cute too!

The cake was too cute, it had a little monkey...cause if he's anything like his mother was, he's going to be a little monkey :)!

After the shower we went to meet Alan at the waterfront to see how his charter went and I got a couple of pictures with Sandy (my sister's pup) on the boat. She loves the water & the boat. Alan (my bro-in-law) cooked us a great dinner, that was very tasty! Sunday before we left, we took a little walk on the beach while Sandy went for a swim. (She shook off right on my was funny!)

Recipe: Jerk Pork Chops

Since this is dinner tomorrow night, I thought I'd share. This one of my favorite, cause it's nice and spicy!

1 ½ pounds Pork Tenderloin, cut into 1 inch thick chops
1 bottle Mango Salad Dressing (or Papaya)
½ c. Orange flavored Rum
2 T. Salt Free Jamaican Jerk Seasoning
2 T. Crushed Garlic

Place pork in a large zip-top plastic bag.

For marinade, in a bowl, combine salad dressing, rum, jerk seasoning, and garlic. Pour into zip-top bag with pork. Squeeze air from bag and seal. Gently massage bag to combine ingredients. Marinate in the refrigerator over night.

Set-up grill for direct cooking over high heat. Remove the pork from the refrigerator 30 minutes before cooking. Oil grate when ready to start cooking.

Remove pork from the zip-top bag; discard marinade. Place pork on the hot grill. Cook until done, turning to cook evenly.

Remove from grill and let stand for about 5 minutes before serving.

The marinade is also good on veggies, this works well with kabobs too!

Crazy Morning... far, I've managed to be embarrassed by my dog while taking her to daycare, and I've locked myself out of the application I support. And we just found out that my boss for some reason does not have access to this application (I's completely messed up!)

I did however see a new official New Moon picture that is introducing us to the wolfpack...(not NCSU, but it's a wolfpack)

P.S. I know I'm a total nerd & yes, I'm excited about the upcoming movie, & it's been a crazy morning anyway!

Red & White Game 2009

It's almost time for FOOTBALL!!

I love college football season! Jason & I are huge NC State Wolfpack fans and get season tickets each year with our friend Andrew & Leah. About this time each year, our team has what's called the "Red & White Game", we play ourselves and fans get to come watch & tailgate.

Now Jason & I love to tailgate! We have friends that like to tailgate with us, so we 'practice' tailgating each year at the Red & White game. (You know, to make sure we still know what we're doing for the fall.) We had a great time this year & beautiful weather.

Good morning...

New Furniture is Here!

Sausage Rigatoni Bake

1 lb Mild Italian Sausage (or Hot)
1 jar Newman’s Own Marinara Sauce
3 c. Cooked Small Cut Pasta
1 ½ c. Mozzarella Cheese

Preheat oven to 425°.

Brown sausage until cooked through. Add marinara sauce and mix well.

In a glass baking dish, mix the marinara, sausage, and pasta. Cover with mozzarella cheese.

Place in the oven until cheese is melted.

Happy Easter!

Happy Easter everyone!!

Well, Jason & I did it, we made it through Lent without eating meat! I'm very proud of Jason that he was able to do it, with little complaining :). I don't think it made us eat healthier like we thought it would, but it got us to try some new things. There are a few things that I found that I really like and I found out that tofu really isn't that bad (in some things). I found out that my new favorite thing to eat is mushroom ravioli...its very tasty!

Now we will be back to our normal (more balanced) meals. Possibly a few nights without any meat :)...I don't really mind it all that much now :), but I'm pretty sure Jason will choose meat over vegetarian options any day!

Playin' Hooky From Work

Yesterday afternoon Jason IMed me at work and asked if I had to go to the office today...I asked why and he said he had something in I asked off work (and the last minute request was granted, cause my boss is just awesome!)

Jason wanted to take me to the ZOO!!

We haven't been to the zoo, since Jason got me to play hooky from work the last time, and we came back engaged :)!! (Believe it or not that was 5 years ago!) Today was a beautiful 75 degrees, sunny, and a slight breeze in Asheboro. Some of the exhibits have changed, and Jason truly wasn't as nervous this time around :). I love the zoo, I wanted to work there when I was little (and I do have a zoology degree). Here are some pictures I took (had to try out the new camera). We have are lucky to have a good zoo. It wasn't very crowded since we got there pretty early, so it was fun. By the time we were leaving, it was packed!

On our way home, we decided to try to find some wineries to stop at. Jason & I haven't gone to any since we went to Napa Valley & Sonoma in California. We found one, that we weren't quiet sure about at first, there was a very long dirt road going up to it. It was called Horizon Cellars. There were two wines that we really liked, so of course we bought some! It turned out that when we walked in one of the partners was my old boss' neighbor that we met at her New Year's Eve Party. (It's such a small world sometimes!) The second winery we stopped at was Silk Hope Winery, they had a great semi-dry white.

Once we got back in Raleigh, we went furniture shopping, and got a new sofa & loveseat for the living room (can't wait for it to get delivered on Tuesday!)

Overall we had a great day together! I think sometimes you just need to get out of town for just a little bit to spend with each other and relax.

I Feel Like Running...

Okay, some of you are probably going to really think I've lost my mind...but yes, I am going to run in a 5K at the end of May. I've been running a lot at the gym and I've enjoyed it, so Jonathan (my trainer) mentioned to me one day that I should start to run races. (Yes, I thought he was running with other people around that I could accidentally harm with my clumsiness...) But I started to think about it more and Jason brought it up that he would like to run in a 5K sometime as well, I figured what the hell...

So with a little help, I found a race to run in, it's nothing big it just looks like something fun to start out with. It's the Skirt Chaser 5K Race here in Raleigh. The winner gets a prize, but I'm just going to run to see how well I actually do. I normally run on a treadmill, so I'm going to have to start running outside to get used to it. I have to actually watch where I'm going and breathe at the same time! (Geez...that's going to be hard!)

The race is the weekend after I get back from Forks, so hopefully I won't do too bad after not getting to run like I normally would for a week. But we shall see!

I'll try to keep you all updated on how the training goes.

It's Spring!!

It's a beautiful day in the neighborhood, a beautiful day in the neighborhood...

I think Spring has finally arrive in Raleigh. I just noticed yesterday how all of the azaleas and flowers are blooming around the house. They are really pretty, I wish they would bloom all year (without me having to do anything). My favorite is the tulip tree in the backyard.

Sadly, I also noticed the other day (right before it rained, AGAIN!) that there was this strange yellow substance on my car, yes POLLEN! My least favorite part about Spring, but I will deal with it to have nice warm, not too humid days, for a few weeks at least!

Soon we will be able to go to the Farmer's Market each weekend for cucumbers, tomatoes, and WATERMELONS!! (Still a little early for those, but I'm excited about getting them!)

YEAH Jason!

I've been looking for a new camera for awhile to take on my upcoming girls trip, and just to have a smaller camera that I can carry with me. (I noticed that we don't really have that many pictures of us that weren't taken at our wedding, so I'd like to fix that...) I decided what camera I wanted and last night while we were at Best Buy getting Jason a new computer monitor, he got me the camera I've been wanting :)!

April Fools Day

What is the point in this day actually and who decided that we needed a day to play jokes on someone? Maybe I just don't get it, but I don't see why we need to set-aside a day to play pranks on someone, then they expect it.

Isn't it better to play a prank on someone when they aren't expecting it??
